Instructions
Heat oil in a skillet over medium-high heat, then add potatoes and cook until golden, about 6 minutes.
Push potatoes to one side, add ground beef, crumble, then add onion and bell pepper. Season with salt and pepper, cook until beef is browned.
Add green chiles, spices, and cilantro; stir and cook until potatoes are tender and beef is cooked through, about 6-8 minutes.
Taste and adjust seasoning if needed, top with cheese, and cook until melted, about 1 minute. Garnish with cilantro and serve hot.
Notes
For extra flavor, garnish with additional cilantro or hot sauce.
