  • 2 tablespoons avocado oil
  • 1 pound potatoes (cut into 1/2 inch cubes)
  • 1 pound lean ground beef
  • 1/2 cup diced yellow onion
  • 1 red bell pepper diced
  • 1 teaspoon kosher salt (approximate 1-1.5 teaspoons)
  • 4 ounces diced green chiles
  • 2.5 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 cup cilantro (chopped)
  • 1/2 cup shredded cheese

Instructions 

  • Heat oil in a skillet over medium-high heat, then add potatoes and cook until golden, about 6 minutes.
  • Push potatoes to one side, add ground beef, crumble, then add onion and bell pepper. Season with salt and pepper, cook until beef is browned.
  • Add green chiles, spices, and cilantro; stir and cook until potatoes are tender and beef is cooked through, about 6-8 minutes.
  • Taste and adjust seasoning if needed, top with cheese, and cook until melted, about 1 minute. Garnish with cilantro and serve hot.

Notes

For extra flavor, garnish with additional cilantro or hot sauce.
