Instructions
Preheat oven to 350°F (175°C).
Cook diced chicken in olive oil with spices until no longer pink, about 5-7 minutes.
Mix cooked rice, beans, corn, tomatoes, and salsa in a bowl. Add cooked chicken and combine.
Transfer mixture to a greased 9x13-inch casserole dish, top with shredded cheese.
Cover with foil and bake for 25 minutes, then remove foil and bake 10-15 minutes until bubbly and golden.
Let cool briefly, garnish with cilantro, and serve.

You can customize the spice level by adjusting the salsa and chili powder.
