Ingredients

Vegetables

  • 1 medium onion, diced
  • 1 pound Laura's 92 Lean Ground Beef
  • 0.5 cup sweet peppers, diced mini peppers or bell peppers
  • 3-4 tablespoons water
  • to taste Salt
  • 1 head butter lettuce, leaves separated

Optional toppings

  • 1 tablespoon chopped cilantro
  • 2 tablespoons sour cream
  • ½ cup shredded cheese
  • ½ cup diced tomatoes
  • ½ cup diced avocado
  • ½ cup salsa
  • 1 tablespoon chili powder
  • ½ teaspoon cayenne pepper
  • ½ teaspoon garlic powder
  • 1 teaspoon cumin

Instructions 

  • Mix taco seasoning ingredients in a small bowl and set aside.
  • Cook beef and onions in a skillet over medium heat until browned. Add peppers and cook until tender.
  • Sprinkle with 2 teaspoons of taco seasoning, add water, and stir. Season with salt if desired. Cook until hot and seasoned.
  • Place lettuce leaves on plates, spoon beef mixture into centers, and add optional toppings.

Notes

Keep some taco seasoning for future use and customize toppings to your preference.
