Ingredients

Marinade

  • 1 cup plain full-fat yogurt
  • 2 teaspoons black pepper
  • 2 teaspoons kosher salt
  • 2 tablespoons honey
  • 4 cloves garlic, crushed
  • 1 tablespoon lemon juice
  • Zest of 2 lemons lemon zest
  • ½ cup fresh basil leaves
  • 2 tablespoons olive oil
  • 2 pounds boneless, skinless chicken breast, cut into 1-inch cubes

Serving

Instructions 

  • Blend yogurt, black pepper, salt, honey, garlic, lemon juice, lemon zest, and basil until smooth, then add olive oil and pulse again.
  • Pour marinade over chicken cubes, stir to coat, and refrigerate for 24 hours.
  • Preheat grill to medium-high, thread chicken onto skewers, and grill for 4-5 minutes per side until cooked through.
  • Alternatively, cook on stovetop in a cast-iron skillet for 4-5 minutes per side, or broil until browned and cooked through.
  • Serve warm with rice or bread, garnished with fresh mint if desired.

Notes
