Enjoy these easy, customizable breakfast burrito cups perfect for meal prep and on-the-go mornings.
Ingredients

cooked black beans, drained and rinsed

diced bell peppers (red and green)

Instructions
Preheat oven to 375°F (190°C). Grease a muffin tin.
Whisk eggs with spices, salt, and pepper. Mix in beans, peppers, onion, and half the cheese.
Cut tortillas into circles larger than muffin cups and press into cups.
Pour egg mixture into each tortilla, top with remaining cheese, and bake 20-25 minutes.
Cool slightly, garnish with cilantro, and serve. Store leftovers for meal prep.
