Ingredients

Eggs

  • 6 large eggs
  • 1 cup cooked black beans, drained and rinsed
  • 1 cup diced bell peppers (red and green)
  • 0.5 cup diced onion
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 0.5 teaspoon paprika
  • 0.5 teaspoon cumin
  • to taste salt and pepper
  • 6 whole whole wheat tortillas
  • for garnish fresh cilantro
  • optional salsa, for serving

Instructions 

  • Preheat oven to 375°F (190°C). Grease a muffin tin.
  • Whisk eggs with spices, salt, and pepper. Mix in beans, peppers, onion, and half the cheese.
  • Cut tortillas into circles larger than muffin cups and press into cups.
  • Pour egg mixture into each tortilla, top with remaining cheese, and bake 20-25 minutes.
  • Cool slightly, garnish with cilantro, and serve. Store leftovers for meal prep.
