Enjoy a vegan, homemade twist on the classic apple pie with flaky puff pastry and sweet apple filling.
Ingredients
Filling
3-4medium applesapples (peeled and chopped)(weighed after peeling)
1/2cupbrown sugar(or to taste)
1/4cupvegan butter
2-3teaspoonslemon juice(to taste (or sub with water))
1teaspoonground cinnamon
4teaspoonscornstarch / corn flour(note 1 for a thinner sauce)
1/4cupwater(or as needed)
1/8teaspoonsalt(if using unsalted butter)
Pastry
2sheetsfrozen puff pastry(thawed but cold)
2-3tablespoonsmaple syrup(for brushing as needed)
Optional topping
coarsesugarcoarse sugar(optional)
Instructions
Preheat oven to 375°F (190°C). Prepare apple filling by combining chopped apples, brown sugar, vegan butter, lemon juice, cinnamon, cornstarch, water, and salt. Cook until apples are tender and sauce thickens, then let cool.
Roll out puff pastry sheets and cut into rectangles. Spoon cooled apple filling onto one half of each rectangle, then fold over and seal edges.
Brush the tops with maple syrup and sprinkle with coarse sugar if desired. Place on a baking sheet lined with parchment paper.
Bake for 20 minutes or until golden brown. Let cool slightly before serving.
Notes
Use cold puff pastry for best results and adjust sugar to taste.
