Ingredients

Dry ingredients

  • 2 cups old-fashioned rolled oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt

Wet ingredients

  • 1 ¾ cups milk (or almond milk)
  • 2 large eggs
  • ¼ cup melted butter or coconut oil
  • cup pure maple syrup
  • 1 tsp vanilla extract

Add-ins

  • ½ cup chopped walnuts
  • ¼ cup raisins or dried cranberries (optional)
  • ¼–⅓ cup additional walnuts

For serving

  • Extra maple syrup (for drizzling)

Instructions 

  • Preheat oven to 350°F (175°C). Grease an 8×8 or 9×9 inch baking dish.
  • Mix oats, baking powder, cinnamon, nutmeg, and salt in a large bowl.
  • Whisk milk, eggs, melted butter, maple syrup, and vanilla in a separate bowl.
  • Combine wet and dry ingredients, fold in walnuts and raisins, then pour into the prepared dish.
  • Sprinkle with extra walnuts and bake for 30–35 minutes until set and golden. Cool slightly before serving.

Notes

Serve with additional maple syrup for extra sweetness.
