(peeled, seeds and pulp discarded, flesh cut into 1 inch cubes)

Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, toss the squash with olive oil, maple syrup, cinnamon, salt, and pepper.
Spread the squash on the baking sheet, ensuring pieces are not touching.
Bake for 25 minutes, then turn the pieces and bake for an additional 15 minutes.
Drizzle with extra maple syrup if desired and serve immediately.
