A delicious roasted butternut squash glazed with sweet maple syrup and warm spices, perfect as a side dish or cozy fall treat.

Ingredients

  • 1 large butternut squash (peeled, seeds and pulp discarded, flesh cut into 1 inch cubes)
  • 1 tablespoon olive oil
  • 1 tablespoon maple syrup (plus more for garnish (optional))
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, toss the squash with olive oil, maple syrup, cinnamon, salt, and pepper.
  • Spread the squash on the baking sheet, ensuring pieces are not touching.
  • Bake for 25 minutes, then turn the pieces and bake for an additional 15 minutes.
  • Drizzle with extra maple syrup if desired and serve immediately.

Notes

For extra flavor, sprinkle with toasted nuts or fresh herbs before serving.
