Ingredients
For the Chicken Marinade
1lbboneless, skinless chicken breasts or thighs, diced or sliced
½cupmango puree, fresh or frozen
1tbsplime juice
1tspchili powder
1tsppaprika
1clovegarlic, minced
½tspsalt
¼tspblack pepper
For the Coconut Rice
1cupjasmine rice
1cupcoconut milk
¾cupwater
½tspsalt
For the Bowls Toppings
1cupdiced mango
1red bell peppersliced
1cupshredded cabbage or lettuce
2green onionssliced
Fresh cilantro
to tastechopped

Instructions
Combine rice, coconut milk, water, and salt in a saucepan. Bring to a boil, then simmer covered for 15 minutes until tender. Fluff with a fork.
Marinate chicken with mango puree, lime juice, chili powder, paprika, garlic, salt, and pepper. Let sit for 10-30 minutes.
Cook marinated chicken in a skillet over medium-high heat for 6-8 minutes until cooked through and caramelized.
Divide coconut rice into bowls, top with cooked chicken, fresh mango, bell pepper, cabbage, and green onions.
Garnish with chopped cilantro and lime wedges. Serve immediately.
