A flavorful and colorful rice bowl packed with seasoned chicken, sautéed vegetables, beans, and cheese, perfect for a quick and satisfying meal.

Ingredients

Rice

  • 2 cups cooked rice
  • 2 tbsp olive oil

Chicken

  • 1 lb chicken breasts thinly sliced
  • 1 tsp chili powder
  • 1 tsp paprika
  • 2 tsp cumin
  • to taste salt and pepper

Vegetables

  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 onion sliced

Beans and Corn

  • 1 cup black beans drained and rinsed
  • 1 cup corn kernels

Cheese

  • 0.5 cup shredded cheese, cheddar or Monterey Jack

Cilantro

  • 0.25 cup chopped cilantro
  • lime wedges for serving lime wedges

Instructions 

  • Heat olive oil in a skillet over medium-high heat.
  • Season chicken with chili powder, paprika, cumin, salt, and pepper. Cook 5-7 minutes until golden and cooked through. Remove from skillet.
  • Sauté bell peppers and onions 4-5 minutes until tender-crisp. Add black beans and corn, cook 2 more minutes.
  • Assemble bowls with rice, chicken, vegetables, cheese, and cilantro. Serve with lime wedges.

Feel free to customize with your favorite toppings like sour cream or avocado.
