  • 1/2 teaspoon cinnamon
  • 1/4 cup chopped pecans
  • 1/4 cup cold butter or vegan butter stick, cut into small cubes

  • 1/4 cup pure maple syrup
  • 1 teaspoon cinnamon
  • 1 tablespoon vanilla extract or bourbon (optional)

Instructions

  • Preheat oven to 350°F (175°C). Grease an 8x8 baking pan.
  • Mix flour, oats, brown sugar, cinnamon, and pecans. Cut in butter until crumbly. Chill topping.
  • Combine apples, maple syrup, cinnamon, and vanilla. Toss to coat.
  • Spread apple mixture in pan, sprinkle with topping. Bake 45-55 minutes until golden and bubbling.
  • Cool 10 minutes. Serve warm, optionally with low-fat vanilla ice cream.

Notes

Using cold butter helps create a flaky topping. Chill the topping before baking for best results.
