A delicious and healthy vegetarian dish featuring bell peppers filled with seasoned lentils, rice, and vegetables, topped with cheese.

Ingredients

Bell Peppers

  • 3 pieces bell peppers (green/red/yellow)
  • 1 tbsp olive oil
  • 2 tbsp garlic (minced)
  • 0.5 cup yellow onion (chopped)
  • 8 oz diced tomato (canned/fresh)
  • 1 cup lentil (cooked)
  • 0.5 cup brown rice (cooked)
  • 0.5 cup veggies (chopped carrots, zucchini, and mushroom)
  • 1 tsp whole black pepper (crushed)
  • 0.5 tsp salt
  • 2 tbsp cilantro (chopped)
  • 1 cup cheese (mozzarella/cheddar/pepper jack)
  • 0.5 tsp red pepper flakes

Instructions 

  • Preheat oven to 375°F (190°C). Cut the tops off the peppers and remove seeds.
  • Sauté garlic, onion, and veggies in olive oil until tender.
  • Mix cooked lentils, rice, tomatoes, spices, and cilantro. Stuff peppers with the mixture.
  • Top with cheese and bake for 25-30 minutes until peppers are soft and cheese is melted.

Notes

You can customize the cheese and spices to your taste for added flavor.
