Instructions
Rinse rice thoroughly and set aside.
Heat oil in a pot, sauté chopped onion and garlic until fragrant.
Add diced bell pepper, zucchini, and carrot; cook for a few minutes.
Stir in rice, then add broth and bring to a boil. Reduce heat, cover, and simmer until rice is tender.
Mix in lemon juice, zest, chopped herbs, salt, and pepper. Fluff and serve.
Notes
For extra flavor, toast the rice lightly before cooking.
