A vibrant and flavorful vegetarian rice dish infused with fresh lemon and herbs, perfect for a wholesome meal.

Ingredients

Rice

  • 1.5 cups Long-Grain White Rice (Rinsed thoroughly under cold water)

Oil

  • 1 tbsp Olive Oil (Extra virgin recommended)

Vegetables

  • 1 medium Yellow Onion (Finely chopped)
  • 2 cloves Garlic (Minced)
  • 1 medium Red Bell Pepper (Seeded and diced)
  • 1 medium Zucchini (Diced)
  • 1 medium Carrot (Peeled and diced or grated)
  • 0.5 cup Frozen Peas (No need to thaw)

Broth

  • 3 cups Vegetable Broth (Or chicken broth or water)

Lemon

  • 0.25 cup Fresh Lemon Juice (Juice of 1 large lemon)
  • 1 tbsp Lemon Zest (Zest before juicing)

Herbs

  • 0.25 cup Fresh Parsley (Finely chopped)
  • 2 tbsp Fresh Dill (Finely chopped)

Seasoning

  • 0.5 tsp Salt (Adjust to taste)
  • 0.25 tsp Black Pepper (Freshly ground)

Instructions 

  • Rinse rice thoroughly and set aside.
  • Heat oil in a pot, sauté chopped onion and garlic until fragrant.
  • Add diced bell pepper, zucchini, and carrot; cook for a few minutes.
  • Stir in rice, then add broth and bring to a boil. Reduce heat, cover, and simmer until rice is tender.
  • Mix in lemon juice, zest, chopped herbs, salt, and pepper. Fluff and serve.

Notes

For extra flavor, toast the rice lightly before cooking.
