Ingredients

Salmon

  • 4 fillets Salmon fillets
  • 2 tablespoons Olive oil
  • 3 tablespoons Lemon juice (for marinating)
  • 1 tablespoon Lemon juice (for sauce)
  • 2 teaspoons Dried oregano
  • 2 teaspoons Dried thyme
  • to taste Salt
  • to taste Pepper
  • 4 tablespoons Unsalted butter
  • 4 cloves Garlic (minced)
  • 1 tablespoon Fresh parsley (chopped)
  • 2 cups Cooked rice (white or brown)
  • 1 cup Cherry tomatoes (halved)
  • 1 cup Cucumber (diced)
  • 1 avocado Avocado (sliced)

For serving

  • as needed Lemon wedges

Instructions 

  • Marinate salmon fillets with 2 tbsp lemon juice, oregano, thyme, salt, and pepper for 10 minutes.
  • Cook salmon in a skillet with olive oil until golden and cooked through, about 4-5 minutes per side.
  • Prepare garlic butter sauce by melting butter, adding minced garlic, and cooking until fragrant. Stir in 1 tbsp lemon juice and parsley.
  • Assemble rice bowls with cooked rice, topped with salmon, cherry tomatoes, cucumber, and avocado. Drizzle with garlic butter sauce and serve with lemon wedges.

Notes

For extra flavor, add a squeeze of fresh lemon juice before serving.
