Ingredients

Potatoes

  • 3 medium russet potatoes
  • 0.5 tbsp oil
  • salt and pepper to taste salt and pepper (to taste)

Broccoli

  • 1 lb frozen broccoli or fresh
  • 1 tsp oil
  • salt and pepper to taste salt and pepper (to taste)

Ground Turkey

  • 2 lbs ground turkey 93% lean or chicken
  • 1 tbsp oil

Cooked Rice

  • 2 cups cooked rice (day old or frozen is best)

Garlic

  • 6 cloves garlic

Lemon Juice

  • ¼ cup lemon juice
  • 1 tbsp lemon zest
  • 2 tsp dried oregano
  • 1 tsp dried coriander
  • 2 tsp onion powder
  • 10 tbsp tzatziki sauce (store bought)
  • 1 tsp red pepper flakes (optional)

Instructions 

  • Roast potatoes until golden, then set aside.
  • Cook ground turkey with garlic, oregano, coriander, onion powder, salt, and pepper until browned.
  • Steam or sauté broccoli until tender, season with salt and pepper.
  • Assemble bowls with rice, turkey, potatoes, broccoli, and drizzle with lemon juice, zest, and tzatziki. Add red pepper flakes if desired.
