Ingredients

Protein

  • 1 lb shrimp (peeled and deveined)

Seasonings

  • 4 cloves garlic (minced)
  • 3 tbsp lemon juice (freshly squeezed)
  • 2 tbsp olive oil (divided)

Vegetables

  • 1 medium zucchini (sliced into half-moons)
  • 1 diced bell pepper (any color)

Garnish

  • Fresh parsley Fresh parsley (for garnish)

Instructions 

  • Rinse shrimp and marinate with garlic, lemon juice, and 1 tbsp olive oil.
  • Heat 1 tbsp olive oil in a skillet, sauté zucchini and bell pepper for 3-5 minutes.
  • Add shrimp to skillet, cook 2-3 minutes per side until pink.
  • Serve over rice or quinoa, garnish with chopped parsley.

Notes

Use fresh lemon juice for the best flavor.
