Instructions
Prepare the tart crust by mixing flour, icing sugar, salt, and cold butter until crumbly. Add egg and mix until dough forms. Chill for 30 minutes.
Roll out the dough and cut into small tartlet shells. Bake at 180°C (350°F) for 15 minutes until golden. Let cool.
In a saucepan, whisk together egg yolks, sugar, lemon juice, and lemon zest. Cook over low heat, stirring constantly until thickened.
Remove from heat and stir in room temperature butter until smooth. Pour lemon curd into cooled tart shells.
Chill the tartlets for at least 2 hours before serving. Garnish with lemon zest if desired.
Notes
For a richer flavor, use high-quality butter and fresh lemons.
