Ingredients

Cake Base

  • 1 box yellow cake mix or lemon cake mix (for extra lemon flavor)
  • 0.75 cup unsalted butter (melted)
  • 1.5 to 2 cans lemon pie filling (21 oz each)

Cream Cheese Layer

  • 12 oz cream cheese (softened)
  • 0.75 cup granulated sugar
  • 1 egg egg
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon lemon zest

Topping

  • Optional powdered sugar for dusting

Instructions 

  • Preheat oven to 350°F (175°C) and grease a 9x13-inch pan.
  • Mix half of the cake mix with melted butter and press into the pan as a base.
  • Spread lemon pie filling evenly over the base.
  • Beat cream cheese, sugar, egg, vanilla, and lemon zest until smooth; spread over lemon filling.
  • Sprinkle remaining cake mix on top and bake for 35-40 minutes until golden and set.
  • Cool for 45 minutes, dust with powdered sugar if desired, then serve.

Notes

Allow the cake to cool completely before slicing for best results.
