A bright and flavorful dish combining tender chicken, zesty lemon, and pasta in a creamy Parmesan sauce.

Ingredients

Protein

  • 1 lb Chicken Breasts boneless and skinless
  • 8 oz Pasta (any shape you prefer, e.g., penne, spaghetti)
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic (minced)
  • 1 lemon Lemon (zested and juiced)
  • 1/2 cup Chicken Broth
  • 1/4 cup Parmesan Cheese (freshly grated)
  • to taste Salt and Pepper
  • optional Fresh Parsley (for garnish)

Instructions 

  • Cook pasta according to package instructions, undercooking slightly. Reserve 1/2 cup of pasta water, then drain.
  • Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper, cook 6-7 minutes per side until cooked through. Rest and slice.
  • In the same skillet, sauté garlic for 30 seconds. Add chicken broth, lemon juice, and zest; stir to combine.
  • Return chicken to skillet, add cooked pasta, and toss with sauce, adding reserved pasta water as needed.
  • Stir in Parmesan cheese until melted. Adjust seasoning with salt, pepper, or lemon juice. Garnish with parsley if desired. Serve immediately.

Notes

Using freshly grated Parmesan enhances flavor. Adjust lemon juice for desired brightness.
