A flavorful and creamy lemon chicken orzo dish that's perfect for a quick weeknight dinner.

Ingredients

Chicken

  • 2 pounds boneless skinless chicken breasts (cut into 1-inch pieces)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons minced garlic
  • 1 cup dry orzo pasta
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • Zest of 1 lemon lemon zest
  • 3 tablespoons lemon juice (fresh)
  • 1/2 cup freshly grated Parmesan cheese (plus extra for serving)
  • 1 teaspoon Italian seasoning
  • 1 cup chopped fresh spinach
  • 2 tablespoons salted butter

Garnish

  • Fresh parsley (for garnish)

Instructions 

  • Toss chicken with salt, pepper, paprika, and garlic powder. Cook in olive oil until browned, then set aside.
  • Add garlic and orzo to the skillet; stir for 30 seconds. Pour in chicken broth and cook until orzo is tender, about 8-10 minutes.
  • Stir in heavy cream, lemon zest, lemon juice, Parmesan, and Italian seasoning. Add spinach and butter; cook until spinach wilts.
  • Return chicken to skillet, coat with sauce, and cook for 2-3 minutes. Garnish with parsley and extra Parmesan before serving.

Notes

Adjust seasoning to taste and serve immediately for best flavor.
