A flavorful and easy lemon butter chicken that combines tender chicken breasts with a zesty, buttery sauce. Perfect for a quick weeknight dinner.

Ingredients

Chicken

  • 4 pieces boneless (skinless chicken breasts (1½ to 2 lbs total))
  • 0.5 cup all purpose flour
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic (minced)
  • 1 cup chicken broth (low sodium)
  • 3 tablespoons juice of 1 large lemon
  • 1 lemon zest of 1 lemon
  • 4 tablespoons cold butter (cut into pieces)
  • 2 tablespoons fresh parsley (chopped)
  • to taste Salt and pepper

Instructions 

  • Cook chicken in oil and butter until golden and cooked through, about 5-6 minutes per side. Set aside.
  • Sauté garlic, add broth and lemon juice, simmer until reduced by half, then stir in cold butter and lemon zest.
  • Return chicken to skillet, spoon sauce over, garnish with parsley, and serve immediately.

Notes

For extra flavor, add a pinch of red pepper flakes to the sauce.
