Instructions 

  • Preheat oven to 375°F (190°C). In a bowl, combine oats, baking powder, salt, and cinnamon.
  • In another bowl, whisk together milk, maple syrup, melted coconut oil, eggs, vanilla, and lemon zest.
  • Mix wet ingredients into dry ingredients until well combined. Fold in blueberries.
  • Pour mixture into a greased baking dish and bake for 30 minutes until golden.
  • Let cool slightly before serving. Enjoy warm or at room temperature.
