A quick and healthy way to enjoy leftover turkey with fresh ingredients layered in mason jars, perfect for meal prep and on-the-go lunches.

Ingredients

Dressing

  • 4 Tbsps freshly squeezed lemon juice
  • 2 Tbsps pure maple syrup
  • 4 Tbsps extra virgin olive oil

Main ingredients

  • 3 cups diced (or shredded leftover turkey)
  • 2 medium crisp organic apples (diced)
  • 2 cups chickpeas (drained and rinsed if using canned)
  • 1/2 cup dried cranberries
  • 1/2 cup sliced scallions (green onions, or a small red onion)
  • 1/2 cup freshly chopped parsley leaves
  • 1/2 cup chopped pecans
  • 4-6 cups chopped organic baby spinach (or mixed greens/arugula)

Notes

  • sea salt and freshly ground black pepper (to taste)

Instructions 

  • Make the dressing by whisking lemon juice, maple syrup, and olive oil.
  • Divide dressing into four mason jars.
  • Add diced apples, chickpeas, turkey, cranberries, scallions, parsley, and pecans into each jar, coating apples with dressing.
  • Fill jars with greens, seal, and refrigerate for up to 4 days.
  • When ready to serve, pour contents into a bowl, toss, and enjoy.
