A quick and healthy way to enjoy leftover turkey with fresh ingredients layered in mason jars, perfect for meal prep and on-the-go lunches.

Dressing

Instructions
Make the dressing by whisking lemon juice, maple syrup, and olive oil.
Divide dressing into four mason jars.
Add diced apples, chickpeas, turkey, cranberries, scallions, parsley, and pecans into each jar, coating apples with dressing.
Fill jars with greens, seal, and refrigerate for up to 4 days.
When ready to serve, pour contents into a bowl, toss, and enjoy.
