Ingredients

Vegetables

  • 1 large zucchini (sliced on the diagonal into 1/4-inch thick slices)
  • 2 yellow bell peppers yellow bell peppers (halved and seeded)
  • 1 medium red onion (cut into 1/2-inch thick rings)

Additional ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic (minced)
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 slices sourdough bread (1/2-inch thick)
  • 1/3 cup cottage cheese (thick style)
  • 4 oz goat cheese (room temperature)
  • 1/2 lemon lemon (for juicing)
  • 1/4 cup fresh mint leaves (torn)
  • 1/4 teaspoon red pepper flakes

Instructions 

  • Preheat the grill and brush vegetables with olive oil, then grill until tender and slightly charred.
  • Toast the sourdough slices until golden brown.
  • Mix cottage cheese, goat cheese, lemon juice, torn mint, salt, pepper, and red pepper flakes in a bowl.
  • Spread cheese mixture on toasted bread, top with grilled vegetables, and garnish with additional mint if desired.

Notes
