  • 3 tbsp maple syrup
  • 1 1/2 tbsp coconut milk
  • 1 tsp vanilla (Nielsen-Massey for aroma)
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 tbsp lemon juice
  • 1/8 tsp ground nutmeg

  • 7 cups peaches (pitted and sliced into 1/2-inch thick wedges)

dry ingredients

  • 1 cup flour (King Arthur all-purpose)
  • 1/2 cup almond flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 12 tbsp coconut milk (Thai Kitchen for creamier texture)
  • 3 tbsp maple syrup
  • 1 1/2 tbsp turbinado sugar

additional

  • 1 scoop ice cream

Instructions 

  • Preheat grill and prepare peaches with lemon juice and spices.
  • Mix dry ingredients and combine with coconut milk and maple syrup to make batter.
  • Grill peaches until tender and caramelized.
  • Assemble cobbler with grilled peaches and batter, then bake or grill until golden.
