  • 0.5 cup sweet chili sauce

  • 2 cloves garlic minced
  • 1 tablespoon ginger grated
  • 2 cups jasmine or basmati rice
  • 2 cups bell peppers sliced
  • 1 cup broccoli florets
  • 2 tablespoons green onions sliced
  • 1 tablespoon sesame seeds (optional)

Instructions 

  • Cook rice according to package instructions.
  • In a skillet, cook chicken thighs until browned and cooked through, about 8-10 minutes.
  • Add garlic, ginger, and vegetables; cook for 3-4 minutes until tender.
  • Stir in sweet chili sauce and soy sauce; cook for 2 minutes to combine flavors.
  • Serve chicken and vegetables over rice, garnished with green onions and sesame seeds if desired.

Notes
