Ingredients

Dry Ingredients

  • 2.5 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.75 teaspoon salt
  • 0.25 teaspoon black pepper (optional, adds savory flavor)

Wet & Flavorings

  • 0.5 cup cold unsalted butter, cubed
  • 0.75 cup milk (buttermilk, whole or low-fat all work)
  • 0.75 cup shredded Irish cheddar cheese (sharp cheddar preferred)
  • 0.5 cup finely chopped green onions
  • 0.25 cup fresh parsley, chopped
  • 0.25 cup fresh chives, chopped
  • 0.25 cup fresh dill, chopped (optional)
  • to taste extra cheddar for topping
  • 0.25 teaspoon garlic powder
  • a pinch smoked paprika (for depth)

Instructions 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Whisk together flour, baking powder, salt, and black pepper. Cut in cold butter until crumbly.
  • Add milk, cheddar, green onions, and herbs; fold into a soft dough. Gently handle to avoid tough scones.
  • Pat dough into an 8-inch circle on floured surface, about 1.5 inches thick. Cut into 8 wedges.
  • Transfer wedges to baking sheet, sprinkle with extra cheddar, and bake for 20–25 minutes until golden.

Notes

Use sharp cheddar for best flavor. Handle dough gently to keep scones flaky.
