2piecesboneless, skinless chicken breasts or thighs(cut into small pieces)

3clovesgarlic, fresh(minced)
3tablespoonssoy sauce
1tablespoonolive or vegetable oil
2cupscooked rice (white, brown, or jasmine)

1teaspooncornstarch(optional, for thickening the sauce)

1cupbroccoli florets
1cupsliced carrots
1cupsliced bell peppers
Garnishes
to tastegreen onions(sliced)
to tastesesame seeds
Instructions
Cook rice according to package instructions, then set aside.
Cut chicken into small pieces, season with salt and pepper.
Heat oil in a pan, cook chicken until golden and fully cooked.
Mix honey, soy sauce, minced garlic, water, and cornstarch (if using) to make sauce.
Pour sauce into pan with chicken, add vegetables if desired, and simmer until sauce thickens. Turn off heat.
Serve chicken and sauce over rice, garnished with green onions and sesame seeds.
Notes
For extra flavor, marinate the chicken in some soy sauce and honey before cooking.
