Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts or thighs (cut into small pieces)
  • 0.25 cup honey
  • 3 cloves garlic, fresh (minced)
  • 3 tablespoons soy sauce
  • 1 tablespoon olive or vegetable oil
  • 2 cups cooked rice (white, brown, or jasmine)
  • to taste salt
  • to taste black pepper
  • 1 teaspoon cornstarch (optional, for thickening the sauce)
  • 0.25 cup water

Vegetables

  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup sliced bell peppers

Garnishes

  • to taste green onions (sliced)
  • to taste sesame seeds

Instructions 

  • Cook rice according to package instructions, then set aside.
  • Cut chicken into small pieces, season with salt and pepper.
  • Heat oil in a pan, cook chicken until golden and fully cooked.
  • Mix honey, soy sauce, minced garlic, water, and cornstarch (if using) to make sauce.
  • Pour sauce into pan with chicken, add vegetables if desired, and simmer until sauce thickens. Turn off heat.
  • Serve chicken and sauce over rice, garnished with green onions and sesame seeds.

Notes

For extra flavor, marinate the chicken in some soy sauce and honey before cooking.
