A flavorful and easy one-pan dish combining tender chicken, savory rice, and sweet honey BBQ sauce for a satisfying meal.

1poundboneless, skinless chicken thighs or breasts, cut into bite-sized pieces
1cuplong-grain white rice, rinsed and drained
2cupschicken broth, preferably low-sodium
0.5cupBBQ sauce mesquite flavor recommended for extra smokiness
0.25cuphoney
1cupmixed vegetables frozen or fresh - peas, carrots, corn, and bell peppers work well
2tablespoonsvegetable or olive oil, divided
1teaspoongarlic powder
1teaspoononion powder
0.5teaspoonsmoked paprika
0.5teaspoonsalt, or to taste
0.25teaspoonblack pepper, or to taste
2-3green onionsthinly sliced
2tablespoonsfresh parsley, chopped
Extra drizzle of BBQ sauce
Instructions
Cut chicken into 1-inch pieces and mix seasonings in a small bowl.
Rinse rice until water runs clear; set aside. Heat 1 tablespoon oil in a skillet over medium-high heat. Season chicken with half of the seasoning mixture, sear for 3-4 minutes per side, then set aside.
Add remaining oil and rice to the same pan, cook for 1-2 minutes until translucent and fragrant. Pour in broth, BBQ sauce, and honey; stir to combine. Bring to a boil, then reduce heat to low.
Return chicken to the pan, nestling into rice. Cover and simmer for 15 minutes. Add vegetables on top, cover, and cook for another 5 minutes until tender and chicken reaches 165°F (74°C).
Remove from heat, let sit covered for 5 minutes. Fluff rice, garnish with green onions and parsley, drizzle with extra BBQ sauce if desired, and serve hot.
