Honey BBQ Chicken Rice

A flavorful and easy one-pan dish combining tender chicken, savory rice, and sweet honey BBQ sauce for a satisfying meal.

Ingredients

Protein

  • 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 cup long-grain white rice, rinsed and drained
  • 2 cups chicken broth, preferably low-sodium
  • 0.5 cup BBQ sauce mesquite flavor recommended for extra smokiness
  • 0.25 cup honey
  • 1 cup mixed vegetables frozen or fresh - peas, carrots, corn, and bell peppers work well
  • 2 tablespoons vegetable or olive oil, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt, or to taste
  • 0.25 teaspoon black pepper, or to taste
  • 2-3 green onions thinly sliced
  • 2 tablespoons fresh parsley, chopped
  • Extra drizzle of BBQ sauce

Instructions 

  • Cut chicken into 1-inch pieces and mix seasonings in a small bowl.
  • Rinse rice until water runs clear; set aside. Heat 1 tablespoon oil in a skillet over medium-high heat. Season chicken with half of the seasoning mixture, sear for 3-4 minutes per side, then set aside.
  • Add remaining oil and rice to the same pan, cook for 1-2 minutes until translucent and fragrant. Pour in broth, BBQ sauce, and honey; stir to combine. Bring to a boil, then reduce heat to low.
  • Return chicken to the pan, nestling into rice. Cover and simmer for 15 minutes. Add vegetables on top, cover, and cook for another 5 minutes until tender and chicken reaches 165°F (74°C).
  • Remove from heat, let sit covered for 5 minutes. Fluff rice, garnish with green onions and parsley, drizzle with extra BBQ sauce if desired, and serve hot.

Notes

For best flavor, let the dish rest before serving to allow flavors to meld.
