A flavorful and easy one-pan dish combining tender chicken, savory rice, and sweet honey BBQ sauce for a satisfying meal.

1poundboneless, skinless chicken thighs or breasts, cut into bite-sized pieces
1cuplong-grain white rice, rinsed and drained
2cupschicken broth, preferably low-sodium
0.5cupBBQ sauce mesquite flavor recommended for extra smokiness
0.25cuphoney
1cupmixed vegetables frozen or fresh - peas, carrots, corn, and bell peppers work well
2tablespoonsvegetable or olive oil, divided
1teaspoongarlic powder
1teaspoononion powder
0.5teaspoonsmoked paprika
0.5teaspoonsalt, or to taste
0.25teaspoonblack pepper, or to taste
2-3green onionsthinly sliced
2tablespoonsfresh parsley, chopped

Instructions
Cut chicken into 1-inch pieces and mix seasonings in a small bowl.
Rinse rice until water runs clear and set aside.
Heat 1 tablespoon oil in a skillet, season chicken, and sear until golden, then set aside.
Add remaining oil, cook rice with seasonings until translucent, then pour in broth, BBQ sauce, and honey. Bring to a boil.
Return chicken to pan, cover, and simmer for 15 minutes. Add vegetables, cover, and cook for 5 more minutes. Rest for 5 minutes, then garnish with green onions and parsley. Drizzle with extra BBQ sauce before serving.
