A flavorful and easy one-pan dish combining tender chicken, savory rice, and sweet honey BBQ sauce for a satisfying meal.

Ingredients

Protein

  • 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 cup long-grain white rice, rinsed and drained
  • 2 cups chicken broth, preferably low-sodium
  • 0.5 cup BBQ sauce mesquite flavor recommended for extra smokiness
  • 0.25 cup honey
  • 1 cup mixed vegetables frozen or fresh - peas, carrots, corn, and bell peppers work well
  • 2 tablespoons vegetable or olive oil, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt, or to taste
  • 0.25 teaspoon black pepper, or to taste
  • 2-3 green onions thinly sliced
  • 2 tablespoons fresh parsley, chopped

Extra

  • drizzle of BBQ sauce

Instructions 

  • Cut chicken into 1-inch pieces and mix seasonings in a small bowl.
  • Rinse rice until water runs clear and set aside.
  • Heat 1 tablespoon oil in a skillet, season chicken, and sear until golden, then set aside.
  • Add remaining oil, cook rice with seasonings until translucent, then pour in broth, BBQ sauce, and honey. Bring to a boil.
  • Return chicken to pan, cover, and simmer for 15 minutes. Add vegetables, cover, and cook for 5 more minutes. Rest for 5 minutes, then garnish with green onions and parsley. Drizzle with extra BBQ sauce before serving.

Ensure chicken reaches an internal temperature of 165°F (74°C) for safety.
