Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup uncooked long-grain white rice
  • 1 cup chicken broth
  • 1 cup barbecue sauce
  • 1/4 cup honey
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika

Optional garnish

  • Chopped green onions (for garnish)

Instructions 

  • Heat olive oil in a skillet over medium-high heat.
  • Add chicken, season with salt and pepper, cook until browned, then remove.
  • Toast rice in the same skillet for 1 minute.
  • Pour in broth, barbecue sauce, and honey; stir to combine.
  • Return chicken, add vegetables and spices, simmer covered for 20 minutes.
  • Let sit covered for 5 minutes, then fluff rice and garnish with green onions.

Notes

Use fresh green onions for best flavor.
