A flavorful and refreshing shrimp pasta salad perfect for summer gatherings or a quick lunch, combining tender pasta, juicy shrimp, and crisp vegetables with a creamy dressing.

Ingredients

Pasta

  • 8 oz pasta (Barilla rotini) (preferably Barilla rotini for best texture)
  • 2.5 cups shrimp, cooked and peeled (cut into 1/2-inch bites)
  • 4 stalks celery (diced into 1/4-inch pieces)
  • 1 bell pepper bell pepper (diced)
  • 1 small onion onion (finely minced)
  • 1 cup mayonnaise (preferably Hellmann's for creaminess)
  • 3 tbsp sour cream (full-fat for better body)
  • 2.5 tsp vinegar
  • 2 tsp sugar
  • 3/4 tsp celery seed
  • 1/2 tsp mustard
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp fresh dill (chopped for garnish)

Instructions 

  • Dice celery, bell pepper, and onion; set aside. Cook pasta in salted boiling water until just tender, then rinse with cold water and drain.
  • Whisk together mayonnaise, sour cream, vinegar, sugar, celery seed, mustard, salt, and pepper to make the dressing.
  • Combine cooled pasta, diced vegetables, and shrimp in a large bowl. Pour dressing over and toss gently to coat.
  • Cover and refrigerate for at least 1 hour to meld flavors. Garnish with chopped dill before serving.

Notes

Adjust seasonings to taste and serve chilled for best flavor.
