Homemade Chai Scones with Maple Chai Glaze

Ingredients

Dairy and Eggs

  • 12 tablespoons unsalted butter, diced into cubes (very cold)
  • 0.5 cup heavy cream (very cold)
  • 2 large eggs, divided

Dry Ingredients

  • 2 cups all-purpose flour (plus more for rolling)
  • 0.25 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon chai spice blend
  • 0.5 teaspoon kosher salt

Glaze

  • 1 heaping cup powdered sugar
  • 2 teaspoons chai spice blend
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy cream
  • 1 tablespoon maple syrup

Instructions 

  • Chill butter, cream, and eggs. Mix dry ingredients in food processor.
  • Add cold butter to dry ingredients and pulse until crumbly. Gradually add cream and eggs until dough forms. Shape into disc, wrap, and freeze 30 minutes.
  • Roll dough into circle or rectangle, cut into wedges or strips. Brush with egg wash and bake at 375°F (190°C) for 20-22 minutes until golden.
  • Mix powdered sugar, chai spice, vanilla, cream, maple syrup, and salt to make glaze. Dip cooled scones into glaze and let set for 10 minutes.

Notes

For best results, keep ingredients very cold and work quickly to ensure flaky, tender scones.
