These delicious high-protein pecan pie balls are a perfect healthy treat, combining crunchy pecans with a sweet, protein-packed filling.

1cuppecans (toasted, finely chopped or pulsed)
Protein Powder
½cupvanilla protein powder (whey isolate, egg white, or plant-based)
Flours
2tbspalmond flour
Sweetener
3tbspmaple syrup (sugar-free)

2tbspcoconut oil (melted) or nut butter (almond or pecan)(for creamier texture)

1tspvanilla extract

1-2tbspalmond milk (if needed to help mixture bind)

Instructions
Toast the pecans in a dry skillet for 3–4 minutes until fragrant.
Mix chopped pecans, protein powder, almond flour, maple syrup, coconut oil, vanilla, cinnamon, and salt until combined. Add almond milk if mixture is too dry.
Shape about 1 tablespoon of dough into balls and refrigerate for 15 minutes.
Optional: Roll in chopped pecans or dip in melted chocolate for crunch.
Store in an airtight container in the fridge for up to 10 days or freeze for 2 months.
