A creamy, protein-packed pasta sauce made with cottage cheese and fire-roasted tomatoes, perfect for a quick and nutritious meal.

Ingredients

Pasta

  • 8 ounces whole wheat penne
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 15-ounce can fire-roasted diced tomatoes
  • 1 tablespoon lemon juice
  • 0.5 cup full-fat cottage cheese
  • 0.5 cup pasta water (reserved from cooking pasta)

Salt and pepper

Instructions 

  • Cook pasta according to package instructions, save 1 cup pasta water.
  • Heat olive oil, sauté garlic for 3 minutes.
  • Add tomatoes and lemon juice, simmer 10-12 minutes.
  • Blend tomato mixture with cottage cheese and pasta water until smooth.
  • Combine pasta with sauce, toss to coat, season with salt and pepper.

Notes

Use full-fat cottage cheese for creaminess and flavor.
