fire-roasted diced tomatoes

lemon juice

pasta water
(reserved from cooking pasta)

Instructions
Cook pasta according to package instructions, save 1 cup pasta water.
Heat olive oil, sauté garlic for 3 minutes.
Add tomatoes and lemon juice, simmer 10-12 minutes.
Blend tomato mixture with cottage cheese and pasta water until smooth.
Combine pasta with sauce, toss to coat, season with salt and pepper.
