Instructions
Preheat oven to 200°C / 395°F. Peel and cube the butternut squash; slice the onion and carrot.
Toss squash, onion, carrot, and garlic with olive oil, salt, and pepper. Roast for 20–25 minutes until soft.
Squeeze garlic from skins and blend all roasted vegetables with cottage cheese, Parmesan, and stock until smooth.
Adjust brightness with lemon juice if desired. Serve hot topped with pumpkin seeds and green onions, with bread on the side.
