A quick and flavorful sheet pan meal featuring tender steak, roasted potatoes, and green beans, perfect for a weeknight dinner.

Ingredients

  • 1 lb steak (sirloin or flank)
  • 2 cups baby potatoes (halved)
  • 1 cup green beans (trimmed)
  • 2 tbsp olive oil (divided)
  • 2 tsp garlic powder
  • 2 tsp dried thyme
  • to taste Salt and pepper

Instructions 

  • Preheat oven to 425°F (220°C). Toss potatoes with 1 tbsp olive oil, garlic powder, thyme, salt, and pepper. Roast for 15 minutes.
  • Rub steak with remaining 1 tbsp olive oil, salt, and pepper. Add green beans to the pan.
  • Push potatoes aside, add steak and green beans. Roast for 10–12 minutes until desired doneness.
  • Let steak rest for 5 minutes, then slice and serve with veggies.

Notes

Use a meat thermometer to check steak doneness for best results.
