A nutritious and flavorful chicken salad featuring homemade ranch dressing and fresh vegetables, perfect for a quick and healthy meal.

Ingredients

Protein

  • 1 pound Chicken Breast (cut into small bite-sized pieces)
  • 1 tablespoon Olive Oil

Vegetables & Greens

  • 4 cups Packed Greens of choice
  • ¼ small Red Onion (sliced)
  • ¾ cup Cherry or grape tomatoes (halved)
  • ½ English Cucumber sliced or chopped
  • 1 avocado sliced
  • cup Corn (Fresh or canned)

Dressing & Flavorings

  • 1 cup Plain non-fat Greek yogurt
  • 2-3 cloves Garlic (minced)
  • 2 teaspoons Lemon Juice
  • 1 tablespoon Dijon Mustard
  • 2-3 tablespoons Fresh chives (finely chopped)
  • 1 tablespoon Fresh parsley (finely chopped)
  • 1 tablespoon Fresh dill (finely chopped)
  • 2-3 tablespoons water (plus more for a thinner dressing)

Seasoning

  • to taste Sea salt and pepper

Instructions 

  • Make the ranch dressing by shaking all dressing ingredients in a jar until emulsified.
  • Marinate the chicken with about 1/3 of the dressing for at least 15 minutes.
  • Cook the chicken in a heated tablespoon of olive oil until golden and cooked through, about 5-7 minutes.
  • Assemble the salad by combining greens, red onion, tomatoes, cucumber, avocado, and corn in a large bowl. Drizzle with remaining dressing and toss.
  • Serve immediately and enjoy!

Notes

For a thinner dressing, add more water as needed.
