Ingredients

Oil

  • 1 tbsp avocado oil

Vegetables

  • 1 medium yellow onion (diced)
  • 1 lb ground beef (preferably grass-fed/grass-finished)
  • 3 large cloves garlic (minced)
  • 1 optional jalapeño (seeds and ribs removed, diced)
  • 1 large bell pepper (diced)
  • 2 tbsp mild chili powder
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1.5 tsp pumpkin pie spice
  • 1.5 tsp sea salt (or to taste)
  • 1/2 tsp ground black pepper
  • 15 oz can pumpkin puree
  • 1 cup beef bone broth (plus more as needed)
  • 15 oz can black beans (drained and rinsed)
  • 28 oz can whole tomatoes (chopped or crushed by hand, do not drain)

Toppings

  • to taste greek yogurt or sour cream
  • to taste green onion (chopped)
  • to taste fresh cilantro

Instructions 

  • Heat oil in a large pot, sauté onion until soft, then add ground beef and cook until browned. Drain excess fat.
  • Add garlic, jalapeño, bell pepper, spices, salt, and pepper; cook for 1 minute until fragrant.
  • Stir in pumpkin puree, tomatoes, beans, and broth; bring to a boil, then simmer for 45 minutes, stirring occasionally.
  • Taste and adjust seasonings; serve topped with yogurt, green onion, and cilantro.
