Instructions
Combine marinade ingredients and marinate chicken for at least 3 hours.
Shake dressing ingredients together and set aside for 15 minutes.
Heat oil, cook chicken 3 minutes per side, then rest and slice.
Sear pineapple until golden in the same skillet.
Arrange lettuce, avocado, onion, tomatoes, quinoa; top with chicken and pineapple. Drizzle with dressing.
