Ingredients

Chicken

  • 3 cups cooked chicken breast, shredded or diced (rotisserie or grilled)
  • 1 cup pineapple chunks (fresh or canned in juice)
  • 0.5 cup diced mango or papaya (optional, for extra sweetness)
  • 0.5 cup chopped macadamia nuts or slivered almonds
  • 0.5 cup unsweetened flaked coconut
  • 0.5 cup diced celery
  • 0.25 cup sliced green onions
  • 0.5 cup mayonnaise
  • 0.25 cup coconut milk or pineapple juice
  • 2 tablespoons fresh lime juice
  • 1 teaspoon honey or agave nectar
  • 1 teaspoon grated fresh ginger or ground ginger
  • 0.25 teaspoon ground coriander
  • to taste Salt and freshly ground black pepper

Instructions 

  • Dice or shred the cooked chicken and prepare the fruits and nuts.
  • Whisk together mayonnaise, coconut milk or pineapple juice, lime juice, honey, ginger, coriander, salt, and pepper to make the dressing.
  • Gently fold the chicken, pineapple, mango (if using), nuts, coconut, celery, and green onions in a large bowl. Pour dressing over and toss gently.
  • Cover and refrigerate for at least 1 hour to let flavors meld.
  • Stir again before serving. Serve chilled on lettuce, in pita pockets, or with crackers.

Notes

For best flavor, chill the salad for at least an hour before serving.
