cooked chicken breast, shredded or diced rotisserie or grilled

pineapple chunks fresh or canned in juice

chopped macadamia nuts or slivered almonds

unsweetened flaked coconut

coconut milk or pineapple juice

Instructions
Dice or shred the cooked chicken and drain the pineapple. Peel and dice mango or papaya if using. Chop nuts and slice green onions.
Whisk together mayonnaise, coconut milk or pineapple juice, lime juice, honey, ginger, coriander, salt, and pepper to make the dressing.
Gently fold chicken, pineapple, mango (if using), nuts, coconut, celery, and green onions in a large bowl. Pour dressing over and toss gently.
Cover and refrigerate for at least 1 hour to let flavors meld.
Stir again before serving. Serve chilled on lettuce, in pita pockets, or with crackers.
Notes
For best flavor, chill the salad at least 1 hour before serving to allow the tropical flavors to develop.
