A vibrant and flavorful bowl combining marinated chicken, fresh tropical toppings, and a savory sauce for a quick, healthy meal.

Ingredients

For the Chicken Marinade

  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 teaspoon fresh grated ginger
  • Juice of 1 lime lime juice

For the Bowl

  • 1 cup cooked jasmine or brown rice
  • 1 cup fresh pineapple chunks
  • ½ red bell pepper sliced
  • ½ cup shredded carrots
  • ½ cup cooked edamame shelled
  • ¼ cup shredded red cabbage
  • 1 tablespoon sesame seeds (optional)
  • 2 green onions sliced thin
  • 1 tablespoon olive oil

For the Sauce

  • ¼ cup low sodium soy sauce
  • 1 tablespoon honey
  • 1 tablespoon cornstarch
  • ½ cup pineapple juice

Instructions 

  • Marinate the chicken by combining soy sauce, honey, olive oil, garlic, ginger, and lime juice. Add chicken and marinate for at least 15 minutes.
  • Cook the rice and prep all toppings: slice bell pepper, shred carrots, chop pineapple, edamame, cabbage, and green onions.
  • Grill or cook the marinated chicken until fully cooked, then slice.
  • Prepare the sauce by combining soy sauce, honey, cornstarch, and pineapple juice in a small saucepan. Cook until thickened.
  • Assemble the bowls with rice, chicken, pineapple, vegetables, and drizzle with sauce. Garnish with sesame seeds and green onions if desired.

Notes

For extra flavor, marinate the chicken overnight. Feel free to customize toppings based on preference.
