A flavorful and easy-to-make taco rice bowl combining seasoned beef, fresh toppings, and fluffy rice for a satisfying meal.
Ingredients
Meat and Rice
1lbground beef 85% lean(preferably)
2tablespoonsolive oil
1smallonion(finely chopped)
2clovesgarlic(minced)
1packet or 2 tablespoonstaco seasoning mix
0.5cuptomato sauce or salsa
3cupscooked white or brown rice
1cupcorn kernels(fresh, canned, or frozen)
1cupblack beans(rinsed and drained)
1cupshredded cheddar or Mexican blend cheese
1cupcherry tomatoes(halved)
1avocado(sliced)
0.25cupfresh cilantro(chopped)
Lime wedgesfor serving
to tasteSalt and pepper
Instructions
Cook the rice according to package instructions, then keep warm.
In a large skillet, heat olive oil over medium heat. Sauté chopped onion for 3-4 minutes until translucent, then add garlic and cook for 30 seconds.
Add ground beef to the skillet, cook for 5-7 minutes until browned, drain excess fat, then season with salt and pepper.
Sprinkle taco seasoning over beef, stir, then pour in tomato sauce or salsa. Simmer for 5 minutes until thickened.
While beef simmers, warm corn and black beans. Prepare avocado, cherry tomatoes, and cilantro.
Assemble bowls with rice, topped with beef mixture, corn, black beans, tomatoes, avocado, cheese, and cilantro. Squeeze lime wedges over before serving.
Notes
For extra flavor, add hot sauce or salsa to taste.
