Ingredients

Tortillas

  • 6 pieces homemade keto tortillas (or store-bought)
  • 0.5 cup oil-free hummus
  • 4 small zucchinis
  • 2 large carrots
  • 2 any bell peppers (any color)
  • 2 tablespoons olive oil
  • 1 teaspoon white vinegar
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon fresh rosemary (chopped)
  • 1 tablespoon fresh parsley (chopped)

Instructions 

  • Preheat grill or grill pan over high heat.
  • Slice vegetables thinly, toss with olive oil, vinegar, salt, pepper, and herbs.
  • Grill vegetables until tender and grill marks appear.
  • Spread hummus on tortillas, layer grilled vegetables, then roll up.
  • Grill wraps seam side down for 3-5 minutes until warmed and grill marks form.
  • Remove, cool briefly, then slice in half to serve.

Notes

Use fresh herbs for best flavor and consider adding a splash of lemon juice for extra zest.
