4pieceswhole wheat or gluten free wraps
1piecered onion(sliced thin)
1piecered pepper(cut into ½ inch strips)
1smallzucchini(cut into 1 inch rounds)
1tablespoonextra virgin olive oil
1cupcooked quinoa
1cupalfalfa sprouts or sprout of choice
1cupbaby spinach
½cupPlain Greek Yogurt or Tofu Mayo
1tablespoonSriracha
2tablespoonsDijon mustard
2teaspoonsminced garlic
½teaspoonfresh ground black pepper
Instructions
Heat an indoor grill to medium high. Toss red onion, red pepper, and zucchini with olive oil; grill 6-8 minutes per side until tender and browned.
Warm tortillas in a skillet. Spread spicy mayo on each, then layer with spinach, sprouts, quinoa, and grilled vegetables. Fold and roll tightly, then cut in half diagonally.
Mix Sriracha, Dijon mustard, garlic, and black pepper to make the sauce. Refrigerate until serving.
