Ingredients

Fruits

  • 2 pieces ripe but firm peaches (sliced into 8 wedges)
  • 1 tablespoon olive oil

Greens

  • 8 ounces leafy greens (arugula, spinach, butter lettuce)
  • 1/4 cup thinly sliced red onion (about 1/4 of a large red onion)

Tomatoes

  • 1 cup cherry tomatoes (sliced lengthwise)
  • 1 medium avocado (diced)

Cheese

  • 4 ounces goat cheese (could swap for feta cheese)

Nuts

  • 1/3 cup roasted salted pistachios (roughly chopped)

Dressing

  • 1/2 cup olive oil (or avocado oil)
  • 1/4 cup apple cider vinegar
  • 2 1/2 tablespoons raw honey
  • 1 1/2 tablespoons dijon mustard
  • 1 teaspoon kosher salt

Fresh Basil

  • 1/4 cup fresh chopped basil

Instructions 

  • Preheat the grill and lightly oil the peaches.
  • Grill peaches until charred and tender, then slice.
  • Whisk together basil, vinegar, honey, mustard, salt, and olive oil to make the vinaigrette.
  • Assemble greens, grilled peaches, avocado, red onion, cherry tomatoes, goat cheese, and pistachios in a bowl.
  • Drizzle with basil vinaigrette and toss gently to combine.

Notes

For extra flavor, grill the peaches until slightly caramelized.
