A delicious summer-inspired flatbread topped with grilled peaches, melted mozzarella, fresh basil, and drizzled with spicy hot honey.

Ingredients

  • 2 tablespoons unsalted butter
  • 8 oz fresh mozzarella (thinly sliced)

Produce

  • 3 tablespoons honey
  • 1 medium clove garlic (minced)
  • 1/4-1/2 teaspoon red pepper flakes
  • 1-2 tablespoons hot sauce
  • 2 medium peaches (halved and pit removed)
  • 1 tablespoon olive oil
  • 2 flatbreads flatbreads
  • Kosher salt and pepper salt and pepper (to taste)
  • 2 tablespoons minced fresh basil

Instructions 

  • In a small saucepan, melt butter then whisk in honey, garlic, red pepper flakes, and hot sauce; simmer and keep warm.
  • Preheat grill to 400°F. Brush peach halves with olive oil and grill cut-side down 3-5 minutes until caramelized. Slice peaches thinly.
  • Arrange mozzarella on flatbreads, season with salt and pepper, then grill at 350°F for 3-5 minutes until melted and charred.
  • Top flatbreads with grilled peach slices, drizzle with hot honey, and garnish with basil. Serve warm.

Notes

For extra flavor, add a drizzle of balsamic glaze before serving.
