Ingredients

Protein

  • 2 pieces Boneless skinless chicken breasts

Vegetables

  • 1 piece Avocado (sliced or diced)
  • 1 cup Sweet corn
  • 1 piece Cucumber (sliced)
  • 1/2 cup Cherry tomatoes (halved)

Dressing & Seasonings

  • 2 tablespoons Olive oil
  • 1/4 cup Creamy herb dressing
  • to taste Salt
  • to taste Black pepper

Instructions 

  • Rub chicken breasts with olive oil, salt, and black pepper, then grill until cooked through and slice into strips.
  • Arrange greens, avocado, corn, cucumber, and cherry tomatoes in a bowl.
  • Top the salad with sliced grilled chicken.
  • Drizzle creamy herb dressing over the salad and serve.

Notes

For extra flavor, add fresh herbs or a squeeze of lemon.
