Instructions
Whisk olive oil, lemon juice, soy sauce, balsamic vinegar, minced garlic, salt, and pepper. Marinate chicken for 30 minutes.
Cook rice with coconut milk, water, ginger, and garlic until tender, about 45-50 minutes. Fluff and set aside.
Preheat grill to medium-high. Grill chicken 6-8 minutes per side until cooked through. Grill pineapple slices 3-5 minutes per side.
Slice grilled chicken and pineapple. Assemble bowls with rice, chicken, pineapple, bell peppers, and avocado.
Notes
Marinate the chicken for at least 30 minutes for best flavor. Feel free to customize vegetables.
