A vibrant and flavorful dish combining grilled chicken, sweet pineapple, and coconut-infused rice for a tropical-inspired meal.

Ingredients

Protein

  • 2 pounds chicken breast
  • 1/2 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons soy sauce
  • 2 tablespoons balsamic vinegar
  • 3 cloves garlic, minced
  • to taste Salt
  • to taste Pepper

Fruits & Vegetables

  • 1 whole pineapple, cored, skin removed, cut into slices
  • 3 pieces bell peppers, sliced
  • 1 whole avocado, sliced

Grains & Liquids

  • 1 cup uncooked brown rice
  • 1 cup lite coconut milk
  • 1 1/4 cup water
  • 1 tsp grated fresh ginger
  • 1 clove garlic, minced

Instructions 

  • Whisk olive oil, lemon juice, soy sauce, balsamic vinegar, minced garlic, salt, and pepper. Marinate chicken for 30 minutes.
  • Cook rice with coconut milk, water, ginger, and garlic until tender, about 45-50 minutes. Fluff and set aside.
  • Preheat grill to medium-high. Grill chicken 6-8 minutes per side until cooked through. Grill pineapple slices 3-5 minutes per side.
  • Slice grilled chicken and pineapple. Assemble bowls with rice, chicken, pineapple, bell peppers, and avocado.

Notes

Marinate the chicken for at least 30 minutes for best flavor. Feel free to customize vegetables.
